PETALING JAYA: Imagine biting into a juicy burger – something you’ve enjoyed your whole life with no issues – and discovering it just might send you to the emergency room.

For a growing number of people, that fear is very real… and it all starts with a tick bite.

A little-known condition called alpha-gal syndrome (AGS) can leave people allergic to beef, pork and other red meats, sometimes years after enjoying them without a problem.

According to a recent article in Business Insider, one man repeatedly thought he was suffering from food poisoning before doctors finally identified the cause.

After experiencing mysterious reactions following meals that included red meat, he eventually learnt that a tick bite had triggered AGS.

It sounds unusual, but doctors say the condition is definitely real.

AGS develops when certain tick bites trigger an immune response to alpha-gal, a sugar molecule found in most mammals. Once a person becomes sensitised, eating foods that contain the molecule can cause allergic reactions ranging from mild discomfort to life-threatening emergencies.

The condition has attracted growing attention in recent years as more cases are identified, particularly in the United States.

Unlike most food allergies, AGS does not always announce itself immediately. Someone with a peanut allergy might experience symptoms within minutes, but people with AGS often develop reactions two to eight hours after eating red meat.

That delay can make it difficult to connect the symptoms to dinner. A person could go to bed feeling perfectly fine after a steak meal, only to wake up in the middle of the night covered in hives or suffering from stomach cramps.

Symptoms vary from person to person but can include rashes, itching, nausea, vomiting, diarrhoea, abdominal pain and breathing difficulties. In severe cases, the condition can trigger anaphylaxis, which is potentially fatal.

Researchers are still trying to understand why some people develop the syndrome while others do not. One leading theory is that when a tick feeds on a person, it injects saliva containing alpha-gal and other compounds that trigger the body’s immune system.

Once the body learns to recognise alpha-gal as a threat, future encounters through food can spark allergic reactions.

The syndrome can have a surprisingly dramatic effect on daily life. For many patients, avoiding beef, pork and lamb suddenly becomes essential. Some may also need to be cautious about dairy products, gelatine and other animal-derived ingredients.

According to the US Centers for Disease Control and Prevention (CDC), hundreds of thousands of Americans may be affected by AGS, although many cases likely go undiagnosed.

The good news is that not every tick bite leads to AGS, and the condition remains relatively uncommon. Experts also note that some people’s sensitivity may decrease over time, particularly if they avoid further tick bites.

Still, this all serves as a reminder that some of nature’s smallest creatures can have surprisingly lasting consequences. And it could transform a lifelong love affair with burgers and barbecues into something you wouldn’t be able to enjoy in quite the same way again.
